Will I regret not expanding my budget to buy a a6700?
The R50 and R10 aren't as good as the ZV-E10 II for video. The a6700 is a great, well-rounded, camera. I think you would be better off building a lens selection around it than any other camera here. Pretty much on the same spot. Per my research Sony has the widest range of in-brand and other compatible lens options. And sigma 18-50 is quite solid, though do note that it has no OSS, meaning footage will be quite shaky. Consider the Tamron 17-70mm if you can, same aperture with vibration control

Confused between Dji Pocket 3 and Canon EV z10 II
I see with Pocket 3 from all the reviews and footage I've seen on YouTube is that it's bokeh effect isn't asgood as the Z10's, The blury background is made by a large sensor and a wide apeture lens. Both which the Osmo doesn't have. Expect the background blur to look basically the same as your phone
