Z7ii, Z6iii or Z6ii

If you are thinking about going with the Z6II or Z7II I would recommend looking at the Z6 and Z7 too. The used prices of these are ridiculuous and nikon didn't really improve the af going to second generation significantly. That makes the Z6, Z7 a very good deal if you can live with one memory card.

Which older DSLR would be a good back up camera.

I would advise another Z series body given you are switching from Canon. You can use Canon lenses on Nikon Z with the fringer EF to Z adaptor. I have one and its pretty damn good. The AF on most F mount lenses isnt that hot on Z. Its a pretty complicated topic but its partly the lens, partly the FTZ

Upgrade Question - D780/Z5II/Z6III

A D780 is, for all intents and purposes, a DSLR Z6. They have the same sensor, the D780 has much better on-sensor AF for live view (comparable to z6 AF) plus a bunch of other features that mirrorless cameras tend to get.
