A 7700 with 32GB? A beautiful base for a server. The Quick Sync on 7th Gen Intel will do x265 (HEVC) 10 bit. You won't need the 2060. As for a gaming rig, given the market, I'd recommend one on the AMD based mini PCs. I've had a Minisforum UM790 Pro for a bit over two years, and it's great for 1080p

Thanks for sharing! That SER8 sounds like a great quality-of-life jump—32 GB + 1 TB and a tidy desk is exactly what I'm after. I picked up a renewed MINISFORUM Venus UM790 Pro with 64gb ram and 7940HS from amazon about a month ago for $489 and am loving it! My only issues so far was the windows key was invalid, but their customer service sent me a new key within a few hours after confirming everything.

Well not being Chinese is a bit of a tall order in that space but I recently got my Minisforum um790 pro and it is fantastic. Great rizen 9 enough GPU to comfortably game 1080p if you want to. Runs absolutely silent for what I do and is stable. 2x Usb4 most current HDMI 2.1. and 32 gigs of ddr5 ram.

GMKtec K6, Minisforum UM790 Pro, or Beelink SER7 can handle games like Slime Rancher, Dead by Daylight, and House Flipper at medium-high settings. Just make sure it has at least 16GB RAM (32GB preferred) for smoother performance.
