You are correct, m series macs are not production ready. Look into the Lenovo yoga slim 7i aura edition. New and open box are available. Arch wiki has a workaround for the current sleep bug and I think it will get upstream eventually too

Failed to Install Linux on Lenovo Yoga Slim 7i Aura (15ILL9) Lunar Lake 258V
I installed the latest version of Fedora KDE Plasma. The only issues that I really have is when the computer comes out of sleep the fans stop working. This lines up with what Arch users are seeing as well. Sounds like a Lenovo Bios incompatibility. https://wiki.archlinux.org/title/Lenovo_Yoga_Slim_7i_Au
