Which one is better?
The P14s G4 AMD is better built with a more powerful chipset, but RAM is soldered, and can't be upgraded. If graphic capability is important, 3D rendering etc., then I'd look for a machine either with, or upgradeable to 32GB or higher. Performance of the latest E14 G7 Ryzen 7 250, is comparable, wit

Which is a better deal
If docker was the only real consideration, a T14 G2 R7, is up to the task, and with the option, to expand RAM further. Given unknown graphics rendering requirements, the fixed 16GB RAM of the T14 G3 could be more a long term bottleneck, than AMD 5000 and 6000 series differences. Note, T14/P14s stock

Struggling to decide what to purchase (T14 vs T14s vs alternative?)
That is an excellent deal, and a very powerful laptop. Just be aware, for AMD T14/P14s Gen 3 and Gen 4, the RAM is fixed only, it can't be upgraded. It was specific to T14/P14s Gen 3 and Gen 4 AMD models. So AMD Gen 1, Gen 2, Gen 5, Gen 6, T14/P14s all have upgrade-able RAM, but not Gen 3 or Gen 4.

Good thinkpads for $1000 or less?
52Whr battery on AMD versions is not really a problem. Don't look only at numbers. Check the reviews. AMD processors are efficients and battery life depends on processors TDP (energy consumption), screen, etc. https://www.notebookcheck.net/Lenovo-ThinkPad-P14s-G4-AMD-review-fast-portable-straightfor

Is this t14 decent for c. £175
It may be out of budget, but someone mentioned very large discounts at Lenovo UK, and I saw this P14s Gen 5 AMD, for £599. If you priced it as a custom build, it'd be just over £1500, but even at its pre-built offer price was £800 before. Ryzen 5 PRO 8640HS, 16GB RAM, 512GB NVMe, 400 nit 100% sRGB 1

Long time apple fan girl needs windows based laptop suggestion
These will probably do the job, but they're battery life nor build quality isn't going to be very good. I say try and go for a workstation laptop. My personal preference would be a Thinkpad: https://www.lenovo.com/gb/en/configurator/cto/index.html?bundleId=21K9CTO1WWGB1 or https://www.lenovo.com/gb/
