Which one is better?
The P14s G4 AMD is better built with a more powerful chipset, but RAM is soldered, and can't be upgraded. Which is a better deal
If docker was the only real consideration, a T14 G2 R7, is up to the task, and with the option, to expand RAM further. Given unknown graphics rendering requirements, the fixed 16GB RAM of the T14 G3 could be more a long term bottleneck, than AMD 5000 and 6000 series differences. Note, T14/P14s stock

Just downgraded from 26.04 und am happy
After a few weeks of testing Ubuntu 26.04 on my ThinkPad P14s Gen 4 (Ryzen 7840U, 64GB RAM), I am officially throwing in the towel and rolling back to 24.04 LTS. In its current state, this combination is simply not stable enough for a daily driver. Here are the main dealbreakers I’ve been battling:

Struggling to decide what to purchase (T14 vs T14s vs alternative?)
That is an excellent deal, and a very powerful laptop. Just be aware, for AMD T14/P14s Gen 3 and Gen 4, the RAM is fixed only, it can't be upgraded. It was specific to T14/P14s Gen 3 and Gen 4 AMD models. So AMD Gen 1, Gen 2, Gen 5, Gen 6, T14/P14s all have upgrade-able RAM, but not Gen 3 or Gen 4.

I saw a ThinkPad p14s, will it suit me
Given what you want of it, my hesitation is RAM is fixed, and can't be upgraded beyond 16GB. AMD T14 G3, P14s G3, T14 G4, and P14s G4 all fixed only RAM. Intel G3/G4 equivalents generally, but you must check, had 8GB/16GB soldered RAM + 1 open RAM slot. AMD P14s shares the same hardware as T14, but

P14s Gen 4 with i7-1360P randomly resets while in use, seems to only happen on Linux but not windows 11
I have the same super annoying issue- 21HF0021US (ThinkPad P14s Gen 4)- Linux 6.18.9-zen1-2-zen, also tried vanilla linux but no luck i started on Ubuntu 24.04 then updated to Ubuntu 25.10, the random resets kept happening, i tried fedora 43 and surprisingly the the resets dropped like crazy maybe 1

Which one is better?
I was talking specifically of the P14s G4 AMD, the OP was looking at. The P14s Gen 4 Intel, is a mixture of models with soldered only RAM, and others with soldered + 1 open slot.
