Fellow Opus gen 2?!
Correct. When I joined Fellow in November of 2020, Opus was already designed. There was a lot of stuff I wanted to change but couldn't. This is the blank piece of paper version of what I wished we could do. The grinder for the money is ridiculous.

best espresso grinder for someone making mostly milk drinks?
The Niche Zero comes highly recommended. I’d also consider the Fellow Opus 2 rolling out now and at only $199. Conical burrs give great results with darker roasts. Eureka also make great grinders if money is not a limiting factor.

You could wait to see how the reviews are for the Fellow Opus 2. The original Opus wasn’t a hit; but it looks like the Opus 2 might be the grinder to beat at that price point.

I’m very happy with my affordable Fellow Opus (I bought from my company’s “rewards program” shop so it was f-r-e-e). With regular cleaning, it’s superb.

Grinder recommendations [Budget ~$200]
You guys read the post and you come up with a hand grinder rec?! Yikes. OP, the Encore ESP is a solid grinder at $200. It’s reliable and has been around for years, you can’t go wrong. If you can wait until mid-May, the Fellow Opus 2 should be out and at $200 should make for a really strong contender

Is it better to spend more on beans or on equipment for home espresso? [No budget]
I think grinder, water, beans and then equipment Grinder because if you have a bad one with inconsistent ground size then you’ll get a bad brew. I have a Fellow Opus and an Ode Gen 2, which do I return and which do I keep?

C5 esp or the C5 esp pro version
tbh, not for me... I have Timemore grinders with both folding handle (S3) and bent handle (C3esp, C5esp) and whenever possible, would buy the bent handle - non-PRO the S3 was not available with a bent handle for espresso, consider electric - Fellow Opus 2 (not original Opus) might be both affordable
