I know this is old, but to current and future readers, 6 to 7 is pretty fine on the opus. I use 10 with the internal setting fully open and get great results. I only drink light roasts and use this same grind for pour over, aeropress and moccamaster. I've got a fellow stagg ekg and use temps of 200

Your best bets are: Eureka Mignon Zero - good for single dosing coffees, small and compact and all around for espresso and drip Eureka Silenzio 55- best for an all around espresso but same burr as the Mignon Zero.
