I was just about to make a $1200+ purchase on the Eufy website, then I scrolled this sub. Would I make a mistake by buying in?

Agree on the PoE wired cameras with a PoE switch/NVR. What you described is not a Eufy problem but more likely related to your wireless application. While some have good luck with wireless, others don't..especially for outdoor cameras. Eufy has good cameras in the higher tier PoE setup (think S4 Max

Eufy is currently not a serious security product. Bugs and no fail safes.
That's why you go with proper security cameras that are recognized as enterprise/business-level CCTV (Hanwa, Axis, Dahua, Avigilon, etc.). (I know some cameras are banned, some aren't.
