Eero 6+ is more than fine. Go with their 7 option if you want. I’ll probably get hate for this, but UniFi will be overkill. Source: been installing UniFi for 10 years.

The home was built in 1979, is 3 stories, and has phone jacks in every room. I am pretty sure this is old telephone wire and not cat 5, but not 100% sure.
