I'm used to the 27" 5K display from apple and other monitors just don't look as good (bad colors, having visible pixels, etc). Any suggestions?

Take a look at the dell U2725qeIts got 120hz refresh rate so depending on the type of games you play it may be enough. Downsides for gaming- is that it has an 8ms response time and no freesync Also people have noted a background coiling sound too

Does the downstream monitor need to support MST for daisy-chaining to work?

Did you ever figure this out? I've also just bought a Dell U2725QE and have the same problem (I've got a 9070XT though) No combination of cable, output port (DP or USB-C), refresh rate or monitor setting seems to work.
