Storage suggestions
The GM7000 has DRAM cache; you should install Windows on it. Games do not need DRAM cache or even Gen4 speeds (see https://youtu.be/gl8wXT8F3W4); get any cheap 2 TB NVMe drive, such as the KingSpec NX-2280, SK Hynix Platinum P41, or Corsair MP700 Elite.

Would love some input on a potential build!
You can get more for your money. Since you have access to a Micro Center, you should be taking advantage of the CPU/motherboard bundles which save quite a bit of money. Other parts though tend to be more expensive at Micro Center - competitors typically have better prices. Suggesting below that use
