What am I doing wrong?
Exactly this. Only change would be step 2 with aeration. Depending on the strength of the steam wand it can take anywhere from a few seconds to a minute to add in the proper amount of air. I have the breville BEI and it has a very underpowered steam wand

What was your next upgrade after the breville bambino?
I know this is sacrilege but I upgraded to the Breville Barista Express Impress. I like it a lot because it makes it easy for me to dial in my grind fineness and visualize its correlation to pressure with the pressure gage. The streaming wand is great and a little gentler than the one with the Bambi
