Bose Quiet Comfort ULTRA. Ultra. Ultra. With the extra spend. I also love my AirPod Max's. They're a bit heavier but also nice. The Bose QCU are light and loud. Or put on the ANC and a 432Hz flow and you won't hear a kitten mewing beside you.

If it means anything, I have the Bowers and Wilkins PX8 S2, and the Bose quietcomfort ultra 2, and the latter are better in both the sound and ANC department. The Bowers have better build quality. If I were to be taking a flight, the Bose would be coming with me

I did something similar, but I bought the PX7 S3 and the new Bose QCU. I ended up returning both sadly after a week. The Bose sound quality was just bad, and the ANC was okay. The comfort was good though. The PX7 s3 sound amazing, but I couldn't get past the clamping force and wearing them with glas

So which Bluetooth anc headphones follow the curve all the way and not have any dropped off? I'm not sure. You'd have to research it.
