What is the audio output quality of the headphone jack on the Mac Studio M2?

It's really good.. I'm using it with Beyerdynamic DT1990 Pro MKI.It's not crazy detailed and because of that it's suitable for longer listening sessions.I think that to beat that DAC/AMP you need to spend larger money. My recommendation is R2R DAC any other sigma delta will be basically the same.

Advice for boosting in game audio for 80 Ohm DT 990 Pro with upgrading to 250 Ohm in the future.

No clue about gaming, but I use a Fiio K7 for Music and it's a wonderfull DAC+Amp which drives even a 600 ohm Beyerdynamic with some headroom. The dt1990 pro 250ohm is a superb match with the Fiio K7. I just love it.

yeah, you need some good over-ear headphones. Just don't go buy them all though. Give yourself some time to truly experience things so that you can notice details and differences.
