Bethesda/Elder Scrolls?
All of them including Oblivion Remastered? That might be a little tough to pull off at your price range (as I'm assuming USD there) without dropping settings to low. Looking for the best mini pc for a specific game
there are too many brands and models to throw at you, but just know if you want to meet those specs the machine will probably be at least $600 but more like $800+ Which is why at that point you would be more cost effective to build or buy an actual PC. Most mini PCs are from smaller Chinese companie

Which would be the best mini pc for 1440p gaming? Budget ($1200)
BeeLink SER9 Pro with it's Radeon 890M iGPU and some FSR upscaling. At least for a true mini-PC. Without upscaling, it can only produce at 1080p resolution effectively. However, a Small Form Factor PC is typically better for native 1440p resolution. They usually come with more powerful dedicated GPU
