I think you would be spending money in the wrong places. With the ME Mini, you’re paying for the 6 m.2 slots. For your purposes, probably overkill. I got my mom (with similar needs/expectations) a Beelink EQR5 recently and she adores it. ~$300 USD but goes on sale semi-regularly. It's overkill from a hardware standpoint, but she is comfortable with Windows and really enjoys using it thus far.

Any reason u put the Beelink EQR5 over the SER8? I think the SER8 8745 model is the better deal in the beelink lineup.
