Baratza Encore ESP Pro, it's what cured my rage after the Fellow Opus. Whatever you do, do NOT get an Opus. With the Encore ESP Pro you're good to grind just about anything from a reputable brand for $299.

DF54... I am at my wits end.

Best beginner machine?

Get a good grinder like a DF54 or a Baratza Encore ESP Pro and a Breville Bambino Plus and you'll be making great coffee so long as you also have good coffee

Best espresso machine with good steamer wand for ~$500?

I can recommend a Gaggia Classic Pro… it has decent steaming capabilities, though not stellar. Other folks may have better recommendations. I will say that the standard Baratza Encore is NOT suitable for espresso. The Encore ESP or ESP PRO will work. There are also quality, inexpensive hand grinders
