If you do any kind of photo, video, or design work, the Studio Display is tough to beat in absolute terms. The ASUS ProArt is definitely far better value, but if you’ve got the budget for a Studio it’s an excellent product.

Absolutely Remote Monitor. But honestly, if you want a reasonably accurate clean feed, get an Eizo CS/Asus ProArt and a Decklink. That's not, what an iPad is.

I would wait. If you need a 27inch 5K now you could grab the ASUS Pro Art for $799. The screen is great even if the build quality is a little cheap. Then when the new Studio Display comes out sell the Asus for at least of what you paid for it or use it as a secondary display.

Depends on your use case, if you need dedicated GPU, couple of the following won't apply. Lenovo Yoga Pro 9i or slim 9i. I like Asus ProArt for photo editing but my monitors are old and Asus has been lousy lately trying to not honor warranty so its hard to recommend. Color "accuracy" only makes sense if you calibrate it locally and on a regular basis. I use an Asus ProArt PA27AC which I'm pretty happy with. I think it should tick all your boxes.
