If you’re recording in the dark, that’s where things get tricky. Most phone cameras struggle in true darkness, so unless you sleep with a lamp on, you’ll barely see anything. We use wyze cams. No subs. Just buy a sd card and store playback on it. They are great cams. The v3 you can get pan tilt zoom. Amazon and Home Depot has them.

If your phone is on the same network as the camera, you dont need internet (unless you want to access the cloud service). As long as you have a good wifi router you can get signal for 100+ yards. Honestly, for battery-powered Ring cams, if someone has a jammer, it's tough to completely mitigate without hardwired alternatives. I ended up getting a cheap Wyze Cam V3 for indoors with local storage as a backup. It won't stop them, but at least you might catch some footage if the Wi-Fi gets jamme

For your use case, you don't need anything fancy. Wyze Cam v3 is around $35-40 and does exactly what you want, works on WiFi, live view on phone, local storage option so no subscription needed. Totally fine for checking in on weather and cabin conditions.
