Advice on first Unifi setup in 100 yr old house
plaster and lathe is brutal for wifi - those walls kill 5ghz fast. the u6 pro is fine but you might want the u6 long range instead since it has better penetration through dense materials. also consider mixing in a couple u6 mesh units for hallways. three to four aps sounds right but spread them out

Best Mesh Gear? Sick of Asus setup
Consider that your closed cupboard are part of the issue - wifi doesn't go through things well. But... You don't need mesh if you can use ethernet. So yeah, Ubiquiti UniFi. Since you have ethernet available for wiring the APs, this is the way to go. I'd suggest a UniFI Dream Router 7 and whatever AP

Dream Router 7 vs. ASUS MESH
the dream router 7 works with any ubiquiti ap for meshing. grab a U7 Pro as your node - same generation, full speed. or a U6 Mesh if you want something designed for outdoor/outlet mounting. both will mesh seamlessly. the dr7 can do pppoe directly so you can bypass the att modem. i swapped from asus

Wanting to switch but needing help with a solution
i'd go with the udr7 plus two u6 mesh units personally. the u6 mesh pros are designed exactly for shelf/table placement - that redbull can shape works great sitting out. the ux7s are nice but you lose some range without hardwire backhaul in mesh mode. for 2100 sq ft on two floors, udr7 on main floor

Thinking about ubiquiti
ran into this with an old brick row house. you dont need a gateway to start - just run the unifi network controller on your proxmox nuc and adopt the aps. your tp link poe switch will power them fine, no ubiquiti switch required. for desktop placement grab a u6 mesh or u7 pro wall - both sit nicely

Sale! U6 Enterprise In-Wall U6-Enterprise-IW.
No experience with that personally but a mesh system is likely to have better range than a single ap. If you want unifi you would likely be better served by 2 x u6 mesh. Or a combination of in wall or on wall normal ap and a u6 mesh or u6 mesh and one of the other cloud gateways with WiFi built in.
