Weak signal outdoors - best solution?

AC mesh pro still worth it??
honestly for 45 bucks it's not bad but you're spot on about EOL worries. ubiquiti still supports the AC line but they've been pushing wifi 6 hard. i grabbed a U6 Mesh instead last month and it's been solid with better future proofing. the AC Mesh Pro will probably lose major updates in a year or two

LoE injectors could be designed better
Most of the PoE+ and Poe++ Ubiquiti PoE injector I have purchased have a small mounting bracket https://dl.ui.com/qig/uacc-poe%2B%2B-10g/#index The Ceiling APs come with mounting plates. You should of gone with something like a U6 Mesh or wifi 7 UX7 or Wall/inwall

Remote "shed" install via Device Bridge Pro (Network+Access+Protect)
Which one? The u6 mesh or the device bridge? They are both under an overhang. The mesh has been there for 2 winters already. The mesh is also IPX5 rated. That means something. Look at bridging devices and Outdoor access points. U6 Mesh is known to leak on top. They are very good AP, but need to be under cover or given a water proof hat for longevity. U7 Pro Outdoor has really good directional range. If you plan on having A LOT of people in an area go for the E7 Campus. Go

Advice please
i feel you on the Teams call struggle. replace the broken one with a U6 Pro - you'll see better range and speed vs the old AC Lite. for the garden office without ethernet, grab a U6 Mesh and place it in a window or exterior wall closest to the office. it's weather-rated and designed for mesh uplink.

Need help with planning wireless network
i've done this exact setup. for point to multipoint, grab a Ubiquiti Nanostation 5AC Loco on home 1 and matching ones on home 2 and office. they dont broadcast ssid directly - so add U6 Mesh APs outside each building for wifi coverage. the nanostations handle backhaul only. for the barns and outside
