I feel like IPv4 is vastly superior for home networks than IPv6

IPv6 doesn’t have forwards. The IPv6 equivalent to UPnP merely creates allows in the IPv6 firewall itself. Or you make an allow rule for that port, arbitrary IP, explicitly in your router level firewall. Assuming the router can support such rules. (My Archer AX55 can’t)

How to get Private/Guest/IoT networks all around my farm - can I make this work?

Just fot ipv6 tunnel broker from hurricane

Unless you have a good router, you can’t really know. I had to put an OpenWRT since my previous TP-LINK Archer AX55 and my current ASUS both just grab a /64 and use it for LAN and don’t support PD on the LAN side besides that /64.
