What am I doing wrong that my grounds have two deep holes apparent after brewing?

Ceramic pour over swap and overfilling

Can Moccamaster handle all day use?
They should get theMoccamaster CDT Grand with thermos that makes 60 oz of coffee instead of theMoccamaster KBT that makes 40 oz if they are going through that much coffee. I have one at my small business and it is great and makes a lot of coffee.

Grinding pro tips?
Regarding half pots - I find that on my KBT, even when I use the half-pot setting I still need to grind finer in order to get the ideal brew. So I experimented to find ideal grind settings for full pots and half pots, and I generally stick to one of the two batch sizes. The ideal grind settings are
