Why do you need such great ibis for that use case? I switched from Fuji/sony to Nikon, but I’d probably pick a Sony A7C II or an Fujifilm X-T5 for your use case. The Nikon is much heavier.

My advice for any photographer would be to invest more in lenses than the camera body. Sony rx100 VI for a very capable smaller camera. Sony a7c for a small-ish full frame light camera. Both are fantastic.

Are you planning to use your old lenses on the X‑Pro2? Keep in mind that its sensor is tiny and the crop factor will make the focal length longer. You’re not going to get those 40mm you want. I’d say you don’t have to stay with Fujifilm, you could try a Sony A7C or another small full‑frame mirrorles

my sony a7c ii will take way better pictures than every single phone out there and it's only an entry grade full frame (i bought it because it's compact), now image properly high end full frames and even medium format cameras, phones don't even stand a chance against proper cameras. hell, my old d90

To be honest Fuji recipes are the same. They are not universal unless you use something like Reggie's Portra which basically looks like modified Provia which is standard color profile in Fujis world. I didn't like Panasonic LUTs at first but after some play with Magic Lut and adjusting it afterwards
