Z6iii in a A7V World

Well it is two different systems. If you are already in Nikon, no a7v ist not fucking hard enough to switch systems. If you are already in Sony, no Z6 III ist not fucking hard enough to switch systems. If you don't own anything yet, both are too much for a beginner. That's just my take on things.

R5m2 vs R6m3 for dog photography

Agreed, unless OP is only using 1 or 2 lenses they'd probably be better off with the new Sony a7V. Learning a new system, getting new lenses and batteries for essentially the same level of quality doesn't make a whole lot of sense.

FX3 is lethal for photos

Should I switch systems for Bird photography?

I wouldn't blame you for switching, that's for sure. Sony's a7v and Canon's R6iii would also be solid options, with Nikon's Z6iii behind, but not much behind.
