I'm also using a MiniPC (Geekom A8) and a Samsung 4K OLED monitor (Odyssey G8). With the MiniPC I'm able to play with 4k/240fps. So this is most likely your best option available. The monitor itself (TV app) limits you to 60 fps.

What TV do you guys use for the PS5 Pro ?

Man... currently my TV is an old 65Inch 2012 Samsung Curve TV I found on the side of the road that I the replaced the power supply... but I've started playing it more on my Samsung 32 inch Odyssey Neo G8 4K UHD 240Hz Curve that I purchase on release... and it looks pretty amazing it.
