Too much output: grind size vs stopping output flow

I think I checked that scale but it was too big, so I ended up with Maestri House Rechargeable Espresso Scale which fits perfectly. So my question: why keep grinding finer rather than just stopping the output when it hits 36g? That's what I do. I am doing ristretto with 1:1 ratio, so I would stop it

What is a 'luxury' that you've experienced once and now can't go back to the budget version of?

Try the Ninja Luxe Cafe. It's a real espresso machine that also makes drip, and you can use whatever beans you want. It's not cheap, but we got ours last year and truly no regrets. Love it.
