Considering the move from Fuji to Nikon as a pro photographer
I went H2 to Z6iii- the biggest thing you will see is that the autofocus with Nikon blows the socks off anything Fuji has. The S line lenses are way better than the red badge XF glass as well. I miss the aperture rings though.

I have the exact same setup. D850, D5, Z6iii. Z6iii video is outstanding. I don’t do professional video but the quality is great for home use. For stills, D850 is the best quality. Nikon Autofocus quality? Z5II,6III or 7II
I do a decent amount of event coverage in lowlight settings. The Z6III is a great performer and I’ve been able to get very detailed shots shooting at even 12,800 ISO. Autofocus wise, it performs great. I would say it’s 98% of Sony’s, but with more customization available in the controls/menus. Z5II

Z6iii or Z8?
In your shoes I’d go for a Z6iii, as long as you don’t really need the Z8’s extra features/pixels. Z6iii is also easier to carry around, and has more of Nikon’s new imaging cloud ecosystem embedded.
