Quick note since many of your points are video recording specific: Likely in a bid to split the capabilities of cameras, Nikon also made the ZR, which is basically a Z6iii with no viewfinder and some shaving off of camera features in exchange for loads of video specific features, including 3D LUT. I went H2 to Z6iii- the biggest thing you will see is that the autofocus with Nikon blows the socks off anything Fuji has. The S line lenses are way better than the red badge XF glass as well. I miss the aperture rings though.

Z5ii is the best camera under $2k and the z6iii is the best camera at the next price point up. Nikon struggled for a while, but Expeed 7 is the tits and now that they’ve got subject tracking autofocus nailed down, they are the most well-rounded brand.
