Help me choose a mirrorless camera, i've been stuck for months?

The Nikon Z5 II is currently the best value full-frame mirrorless camera, with no significant compromises. Definitely consider that. Plenty of good Z mount lenses now.

Z8 vs Z6III

Which zoom lens should I buy - Nikon 180-600mm or Sony 200-600 mm?

I would consider the Nikon 600mm pf and Z5 ii (crop) body. If you are photographing birds, this will give you a very sharp lens with 900mm equivalent. In the future, you could upgrade to a Z8 body.
