I moved from an old D70 to a new z5 and it's lovely. Autofocus is not as good as it could be but that's in comparison to the higher end of Nikon's range which are quite good. The z5ii is a great camera that does better autofocus. Mine is a great camera, like carrying a miniature medium format camera

I would consider the Nikon 600mm pf and Z5 ii (crop) body. If you are photographing birds, this will give you a very sharp lens with 900mm equivalent. In the future, you could upgrade to a Z8 body. You can also consider the Z6iii, but you will have less ability to crop images that start at 24MP full
