I moved from Z50 II to Z5 II. I value IBIS more. My other cameras have IBIS and I couldn't go back to a body without IBIS. Mirrorless equivalent of D7500?
Nikon Z5ii with Nikkor 24-120 F/4 Z mount lens. Thats all you need. If saving money, can also look at Z5 since you are into landscape and architecture so don't need wildlife fast autofocus.

Super telephoto for Z
The Nikon 200-500 f/5.6 + the FTZ comes in under your budget if you buy used. I use them to shoot birds on the Z5 II and it works amazing.

Thinking of making the switch from DSLR to Mirrorless
I moved from an old D70 to a new z5 and it's lovely. Autofocus is not as good as it could be but that's in comparison to the higher end of Nikon's range which are quite good.
