You can do 10-bit SDR without doing LOG, that's how I usually shoot these with my Nikon gear. Shoot FLAT profile if you plan to grade or the lighting is tricky. If a 3 camera shoot was mandatory, I'd bring a backup camera. But I think you can get away with this assignment with 2 cameras and a backup
