Used Ergodox EZ vs a new iris?
Between those two, I’d say go for the Ergodox. More keys means an easier transition. And that is a good deal. But the Ergodox is still a columnar board. For true newbies, I recommend a keyboard that is just like a regular, staggered keyboard, but split in two. Consider Kinesis Freestyle Pro or Matia

Microcenter was selling their last Matias Ergo Pro for around $110. I love my Tactile Pro so much that I decided to jump on it as my first ergo keyboard. 20 minutes in, I am loving it! I am just dreading if the switches start chattering.
I am 2 years into using this keyboard and so far I have had very very few issues. There was a couple of times where a key would keep repeating, but I just had to mash the key repeatedly to fix it. I was quite impressed that its held up so far. But I still fear that the chattering may get really bad.

Work keyboard recommendations
Matias Ergo Pro is what I use for work computer. It is wired, it has very limited built in rebinding (three bonus keys on left hand side, one on right hand side) but no qmk/zmk/flashing. It is split and tentable (by default, you don't need any stands, it has pretty neato little legs that allow both
