For Excel-heavy work I’d definitely go with something like a 34–38" ultrawide and keep one of the 24" monitors in portrait mode for email or docs. That combo tends to work really well for spreadsheets and screen sharing. For standing desks, Fully Jarvis and Uplift are both solid and have good cable

Using a whole-ass $1,000 digital camera to stream is needlessly complicated, not really great for the camera itself, and almost certainly overkill for what you'll be doing with it. You can buy a C270 Logitech for like $15 and it'll be fine. Go up to the C920 if you really wanna be fancy.
