Is it a mistake to keep game brightness hdr on 500 nits?

There's no wrong answer in this, just don't sit too close to peak brightness I use 400PW on my LG G5 (2500 peak) and it looks amazing, highlights have enough room to shine and the whole picture looks very real

infact LG is the one that sells OLED panels to Sony. They don't make their own. Also LG OLEDs are better than SOny, especially in gaming. So blindly go for G5, it has crazy brightness and arguably the greatest OLED ever
