Surfshark is owned by the same entity as NordVPN. They are associated with Tesonet, a company which has a data mining arm (OxyLabs). I would suggest you stick with the PrivacyGuides recommendations for VPNs, that is, Proton VPN, Mullvad, or IVPN: https://www.privacyguides.org/en/vpn/

Is Apple ok?
A realistic assessment is that a Pixel with GrapheneOS is significantly more private than an iPhone. GrapheneOS collects no personally identifiable information itself and has all remaining connections to Google inherited from AOSP, which are very few, proxied. Can't do much better than that. Graphen
