HERO10 Black

I use a gopro hero 10 on a chest mount, and it works very well. I was able to give the footage to another cyclist when they were threatened by a road rager, and they were able to file a police report. Quality was good enough to get a clear license plate even from a distance.

I have a Hero 10 black that is pretty good for what it is if you're strapping it to a bike or car, but for talking head youtube you're honestly better off with your phone or even better a dslr/mirrorless.
