It really depends on your use case. If you are using it as a travel router with < 300Mbps VPN speeds, then the AX is fine. Is the GL.iNet Mudi 7 better than the Slate 7? Any info on release date / price? 🤔
The UTR works like the Gl-iNet - Allows rebroadcasting a Wifi Network as your own, you can use their VPN services (currently only WireGuard and their Gateway specific Teleport). I am not getting one despite being a Unifi user is because of the Wifi 5 and the Beryl 7 coming out around the corner.

What you want is Tailscale, and probably a GL.iNet Beryl 7 or similar to be the router/client. Your friend/ family with a non CGNAT ISP will need to be on the same Tailscale network and subnet as you are and advertise as an exit node. I would suggest putting a GL.iNet Brume 2 device on their network
