I picked up swimming several months ago. Just last week, I finally upgraded from my super old garmin forerunner 235 to a new forerunner 965. I was able to track a swim at the pool for the first time with the new watch and was stunned at how many calories that the garmin app and strata said I burned.

yes it would track it, the accuracy probably wouldn't be very good though. even with my garmin forerunner 965 it's a bit iffy

I mean you’d be surprised. I have a Garmin forerunner 965 and sometimes on long runs (of 15+ miles) it’ll just decide my heart rate is 75 the whole time (it’s not trust me). Even decently expensive watches are really not that accurate unfortunately.
