Best espresso machine that actually holds up over time? [$700]

That’s the Gaggia e24. Its design predecessors have lasted decades. I once pulled a very abused 20 year old Gaggia Classic from a thrift store and I just needed to clean and descale it and it was running like new.

You’re diverting the flow of water out the steam wand, so it’s like controlling pressure by adjusting the flow rate. I don’t think it’s bad for your machine, and people do it on the Gaggia Classic as well.

Buying a used Gaggia worth it?

This machine you're looking at is considered "fully modified" short of GaggiaMate/Gaggiuno, which would really negate all the existing mods. IMO, the price is worth it. The extra $175, would almost pay for a new brass boiler. If you plan on GaggiaMate/Gaggiuno, the E24 might be a better choice.

Normal usage or something else?

The plate is already off, that's the bottom of the brew group. No easy replacement and kinda expensive. https://www.bluestarcoffee.eu/Mobile/en/Gaggia-Classic-Brewgroup-brass/m-m-6130.aspx OP, try a soft brush and some Citric acid. But I wouldn't bother too much. Looks good.

Well, it was a good run!

I agree w previous poster: Gaggia e24 and get an espresso grinder like Baratza Encore ESP or Sette.Bottomless portafilter too. I've had 2 Gaggia Classics for 15 years (one at home, one at work) and they still perform perfectly. As said before the secret is a good espresso grinder.
