No IBIS on most Fujifilm cameras and not really any prime lenses with OIS, is this as big of a deal as people are making it out to be for my use case?

Advice for first camera: XM5, Xt30-II or XT30-III
If you think you want a viewfinder, then eliminate the X-M5. The X-T30iii is more of a spec bump from the X-T30ii.
