Why are my ESC and FUNCTIONS KEYS + KNOB not working? 😭

Something similar happened to my Epomaker rt100, they told me it's a board issue, so I'm already searching for a new keyboard. I do hope your case is different, check if "game mode" is not active, although it should only disable the f-keys

Epomaker is good, but keep in mind if you buy from them directly they will almost never refund you even if they send you a broken keyboard, their support is not good, their products are great though, i got their rt100 and that shit is nice

Silent keycaps?

Epomaker is fine. Just buy it on amazon and get a long term warranty. I have multiple Epomakers and the only one that went bad with dead keys was the RT100, years ago.
