Does enabling Dolby Atmos / HDR on Now TV actually improve the experience, or just cause buffering?
I got 1gb Up/Down Bose Soundbar 900, 65” LG TV, Latest Apple TV and Ultra boost and I don’t have not issues at all. According with your description looks like is more internet speed issue.

Bose Ultra 900 needs restart every month or so
Make sure the SB900 is updated. Change CEC settings. Turn off Sleep Timer.

My 1 year experience with the Bose Soundbar 900 and why I would not buy it again
Had the same issues with my Bose 900 and Samsung s95c for the first 6 months, but changing to a google TV streamer from the Chromecast streamer sorted all the issues for me.

Bose soundbar 900 not turning on with tv.
Set up TV remote to control Bose soundbar on eARC port, search bose soundbar 900 and setup to control the bose. Turn off power sync in bose app and it should work.
