The frustration is very real. This is why I have bought a new eink tablet seemingly every 8 months (Note air2+, tab c, remarkable paper pro, A6X2). I agree that software on the paper pro is frustrating. It also isn't as good for organization as it's competitors (supernote is the best in my opinion).

Kobo Libra color has pen/note taking support. Onyx Boox also has very good note support. Boox is android based, but so few apps actually do well on eink that I wouldn’t worry about it being like your phone.
