Good grinder

I just got a Baratza Encore Esp Pro. So far it is worked well from Moka pot, the Hario Switch, the Oxo Rapid Brewer, and my Aeropress. You could look at the Baratza Encore ESP Pro Great in you are running different beans that you know need different grind settings, or from going from espresso to V60 or cold brewing.

You need to rethink your priorities and/or budget. If you are using your DeLonghi in its stock pressurized configuration, then the Encore is a great grinder to use with it. But any upgraded machine is going to brew non-pressurized, which makes a good grinder more important than the espresso machine.
