I think the Apple Watch SE uses the phones GPS signal if it’s connected. Apple stopped using the phones GPS signal to assist the watch on series 7 or 8. For reference I went from the series 6 to the series 10 and noticed a significant decrease in route quality and found out this was the case.

SE is very capable in my opinion and I would recommend it. I myself upgraded to series 10 after 3 years because I really wanted the bigger and brighter screen.Before considering the Ultra I would strongly suggest to try it on. It is a beast. The only reason you’d get the Ultra would be for dual GPS for running. I doubt you’re a deep sea diver. Extra day or two of battery life is nice but not worth double the price. Everything else including a larger screen can be found on the regular Apple Watch Series 10.
