The iPad Air 5th gen would be enough, especially if you’re just planning on taking notes on it. It also has support for the Apple Pencil 2 (not pro) which charges much more conveniently (than the usbc Apple Pencil) via magnet on the iPad.

Get the iPad Air 5th generation. The M series chips are a major breakthrough in performance and energy efficiency that anything less isn't worth it. It also supports a better apple pencil which is a 2nd gen and magnetic charging with the air5.
