Get a camera with ONVIF or RTSP (Reolink/Amcrest) and avoid cloud-only ones. Either record locally to an SD card or use a simple setup like a Raspberry Pi with MotionEye/Frigate for full control. Disable cloud access and block internet if possible.

Thankfully you can turn off the spotlight on the settings but I have not found the option to do so for the color LED.
